1. In a soup pot, combine broth and water and bring to a boil.
2. Add potatoes, reduce heat to medium-low and cook, covered, for 8 minutes.
3. Add chicken, carrot and celery; continue to cook for 10 minutes more.
4. Add remaining ingredients, except salt and pepper. Reduce heat, cover and simmer 5 minutes or until vegetables are tender and chicken is cooked thoroughly. Season with salt and pepper, if desired.
