1. Preheat oven to 325 degrees. Grease and flour a 9 x 13 pan.
2. Mix dry ingredients. Mix oil, eggs and vanilla. Add wet to dry ingredients and mix completely. Fold in apples and pecans. Bake at 325 for 30 minutes, lower oven temperature to 275 degrees and bake an additional 30 minutes. When cake is removed from the oven, poke holes in the top and pour the icing over the cake.
3. Icing: Mix ingredients and cook over medium heat until thickened.
