  • 1 pre heat oven or gas grill or bbq to 400
  • 2 cut tomatoes in half along the equator
  • 3 set tomatoes cut side up in shallow baking dish or aluminum pie plate
  • 4 on top of each tomato distribute minced garlic evenly (garlic can be fresh or from a jar) Repeat this process with the oregano ( again i have used fresh or dried with good results). Season to taste with sea salt and ground pepper
  • 5 now drizzle with extra virgin olive oil, and top with the grated parmesan
  • 6 Place tomatoes in oven or grill let cook for ten to 15 min or the sides are soft.
  • 7 carefully remove one at a time being careful not to squeeze to tightly.
  • 8 Serve with garlic toast or your meal.
  • 9 I have substituted feta crumbles for the parmesan and received rave reviews as well.
  • 10 really easy and tastes fantastic.
