1. Preheat oven to 475
2. Cut 1 potato lengthwise into quarters; place on a 12 inch square of foil.
3. Brush cut sides of potato with 1 tsp oil, sprinkle with 1/4 tsp each basil and salt, 1/8 tsp oregano, and a dash of pepper. Top with 2 Tbsp onion and 3/4 tsp garlic.
4. Reassemble potato and wrap tightly in foil.
5. Repeat for remaining potatoes.
6. Place wrapped potatoes on bottom rack in oven, bake for 1 hour or until tender.
