1. Preheat the oven to 300 degrees. Beat the egg whites with the salt until foamy. Place the pecans in a large bowl. Pour egg white mixture over the pecans and mix well. In a separate bowl, combine the sugar and the cinnamon. Add the sugar mixture to the pecans and toss until well coated. Transfer to a large baking sheet and bake for 45 minutes.
