  • 1 Cook pasta in salted boiling water following packet directions. Drain, set aside and keep warm.
  • 2 Heat oil in a saucepan over medium heat, add red pepper and cook, stirring, for 2 minutes or until soft.
  • 3 Stir in sweet corn, stock, chilli sauce, cilantro and black pepper to taste and cook for 2 minutes longer or until sauce is hot.
  • 4 Spoon sauce over pasta and toss to combine. Serve immediately.
