1. While the couscous is cooking, prepare the vinaigrette by combining the first seven ingredients in a shallow bowl.
2. Once the couscous is finished, combine with 1/3 of the vinaigrette in a large bowl. Then add the remaining ingredients and toss until well-coated. Cover and chill for four hours or overnight.
3. If needed, prepare additional vinaigrette to re-dress once ready to serve.
