  • 1 CAKE:
  • 2 grease loaf pan, dust lightly with flour, tap out excess.
  • 3 Combine oil, sugar, eggs and vanilla in large bowl;
  • 4 Sift flour, baking soda, cinnamon and salt onto wax paper, add to sugar mixture;
  • 5 Stir in carrots & nuts; mix JUST until blended;
  • 6 Turn into prepared pan.
  • 7 Bake at 350 for 1 hour or until center springs back when pressed.
  • 8 Cool in pan.
  • 9 When cool, poke holes in cake with a fork and also slide a knife or spatula around edges to get the cake away from the side of the pan.
  • 10 Drizzle glaze evenly over, making sure it gets down the sides too.
  • 11 GLAZE:
  • 12 Combine first 3 glaze ingredients;
  • 13 Add vanilla and stir well.
