  • 1/2 tsp vanilla
  • 3 tbsp brown sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 1 tbsp butter
  • for pancake
  • 3 eggs
  • 3/4 cup whole milk
  • 2/3 cup flour
  • 1 tbsp butter

  • 1 Preheat oven to 425 degrees, set oven rack in the middle of the oven.
  • 2 Peel apples and slice into thin pieces.
  • 3 oss with vanilla, cinnamon, lemon juice and brown sugar.
  • 4 Melt butter over medium heat in saucepan.
  • 5 Add apple mixture and cook about 5 minutes, or until apples have softened.
  • 6 Place 8 inch round pie pan in oven.
  • 7 Using mixer, beat eggs, milk, flour and sugar together in medium bowl.
  • 8 Melt tablespoon butter in pie pan.
  • 9 Pour pancake batter into pan.
  • 10 Scoop apple mixture over pancake.
  • 11 Bake 15-20 minutes, or until top is golden and puffy.
