1. Saute mushrooms, celery, and onion in butter until limp. Set aside.
2. Beat eggs, add milk, flour, salt, paprika, garlic powder, and pepper sauce and beat well.
3. Stir in bacon, mushroom mixture, cheese and wine.
4. Cover and chill for about an hour.
5. To bake:.
6. Stir egg mixture well and turn into a buttered 9 inch quiche pan or deep pie plate.
7. Bake at 350 for 50-55 minutes or until the center is firm.
8. Remove from oven and let stand for 10 minutes before serving.
9. Garnish with bacon curls if desired.
