1. Preheat oven to 375°F.
2. Cream the margarine.
3. Slowly add the sugar a little bit at a time.
4. Add the egg and vanilla; beat until soft and light in texture.
5. Combine cinnamon, salt, and baking soda in a separate bowl.
6. Sift flour into dry mixture and stir well.
7. Beat in half the flour mixture on low speed.
8. Use a wooden spoon to stir in the remaining flour mixture.
9. Place on greased cookie sheets.
10. Press the cookies flat with floured fork.
11. Bake the cookies 8-10 minutes.
12. Allow the cookies to cool 1-2 minutes on the cookie sheets before removing them to cooling racks.
