One of my Mom's recipes that is the ultimate comfort soup on a chilly day. I have no idea where she got the recipe, but remember her singing while she cooked it. Ingredients:
1 cup chopped fresh mushrooms |
1/2 cup sliced green onion |
2 tablespoons olive oil |
1 teaspoon lemon juice |
1/4 teaspoon salt |
1/4 teaspoon oregano |
1/4 teaspoon pepper |
8 cups chicken stock, warmed |
3/4 cup orzo pasta |
2 egg yolks, beaten |
1 cup light cream |
1/4 cup grated parmesan cheese |
salt and pepper |

1 cup ground chicken breast |
2 tablespoons italian parsley, chopped |
2 egg whites |
1/2 cup fine breadcrumbs |
1 tablespoon grated parmesan cheese |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Make meat balls by combining all ingredients. 2. Chill until firm enough to form into balls. 3. Saute mushrooms and onions in oil until soft. 4. Sprinkle with lemon juice, salt, pepper and oregano while cooking. 5. Heat chicken stock to boiling, add mushrooms and onions and orzo. 6. Boil 3 minutes. 7. Add chicken balls and boil until balls float to the top, Turn off heat and combine yolks, cream and cheese. 8. Blend well and whisk into hot soup. 9. Adjust seasoning, to taste. 10. Whisk until serving temperature and serve garnished with chopped parsley. |
