Ingredients:
3 1/2 cup(s) flour
1 teaspoon(s) salt
1 teaspoon(s) ground nutmeg
2 teaspoon(s) baking soda
1 teaspoon(s) ground cinnamon
1 cup(s) brown sugar
1 cup(s) organic sugar
1 package(s) cream cheese or 1 cup of oil (veg)
4 eggs beaten
1/2 cup(s) water
3 cup(s) grated zucchini
1 teaspoon(s) lemon juice
1 cup(s) walnuts
Directions:
1. Directions; Preheat oven at 350.
2. In a large mixer, combine all dry ingredients turn mixer on stir. Start adding wet ingredients one at a time and letting them mix well with the dry. After lemon juice has been added. Turn off mixer and fold in walnuts.
3. Bake in 2 standard loaf pans, sprayed with nonstick spray, for one hour. You could also use 5 mini loaf pans and bake for 45 minutes, or until tester comes out clean.
