Great recipe for zucchini out of the garden. only 86 cals per serving
Ingredients:
2 cups diced zucchini
1/4 small onion
1 cloves minced garlic
1 cup diced tomato
1/2 tsp salt
1 dash pepper
3 tbsp parmesian cheese
1 tbsp soybean oil
Directions:
1. Dice zucchini, slice onion thinly and add with minced garlic, salt and oil to frying pan and cook on medium heat stirring occasionally for 7-10 min or until zucchini and onion are slightly brown add tomato with juice and simmer for 3-4 min top with Parm cheese
