A very light dish for summer. Ingredients:
3 tablespoons olive oil |
2 lbs zucchini, sliced |
1/2 cup chopped onion |
1 tablespoon lemon juice |
2 tablespoons dill, fresh,chopped |
1/2 teaspoon salt |
1/2 teaspoon garlic powder |
2/3 cup yogurt, plain |
Directions:
1. Saute onions and zucchini in olive oil over medium heat 5 minutes. 2. Cover and cook 2- 3 more minutes, or until tender. 3. Combine last 5 ingredients, pour on top. 4. Serve immediately. |
