Zucchini With Walnuts and Chives |

Rounds of zucchini take on great texture and flavor when sauteed with seasoned bread crumbs, nuts and chopped fresh chives. This recipe was on the package of organic chives. Ingredients:
8 medium zucchini, rinsed and dried |
2 tablespoons olive oil |
2 garlic cloves, minced |
1/3 cup lightly packed chopped fresh chives |
1/4 cup chopped walnuts |
1/2 cup seasoned dry bread crumb |
Directions:
1. Slice zucchini into 1/8-inch rounds. 2. In a large skillet over moderately-high heat, heat olive oil. 3. Add garlic and zucchini. 4. Saute until vegetables begin to soften, about 4 minuets. 5. Sprinkle with chives, walnuts and bread crumbs. 6. Cook for 1 to 2 minutes for crumbs to adhere. 7. Turn with a spatula and cook on other side for 2 minutes. 8. Serve immeadiately. |
