Another use for all the zucchini from your garden! The walnuts add a great Crunch to a sometimes mundane vegetable. Ingredients:
4 cups of sliced zucchini |
1/2 cup of sliced green onions, with tops |
2 tablespoons of butter |
3 tablesppons of dry sherry |
1/2 teaspoon of salt |
6 to 8 fresh basil leaves, torn in small pieces |
3 swipes on the rasp of fresh nutmeg |
1/4 cup of chopped toasted walnuts |
Directions:
1. Combine zucchini, onions and butter. 2. Cook in skillet uncovered over low heat, five minutes. 3. Add sherry, salt, basil and nutmeg. 4. Cover and cook over low heat another three to five minutes. 5. Stir in walnuts. 6. Serve immediately. |
