We love squash and zucchini is one of our favorites, the walnuts give it a nice crunch and flavor. Ingredients:
1 ib. zucchini |
1/4 cup olive oil |
1/2 cup sliced green onions |
1/4 cup dry white wine |
2 tbsp. lemon juice |
1/4 cup water |
3/4 cup chopped walnuts |
Directions:
1. Wash the zucchini and cut off ends. Cut into 1/2 inch slices. 2. Heat oil in skillet and saute zucchini and green onions for 5 min., stirring frequently. 3. Pour in wine, lemon juice and water. 4. Simmer for 5 min. longer. 5. Gently but thoroughly stir in walnuts. 6. Transfer to serving dish and serve hot. |
