This is an incredible way to enjoy zucchini. It is so tasty and goes with everything. I make this a lot during the summer months because it is light and goes well with grilled meats. Enjoy
Ingredients:
1 teaspoon vegetable oil
3 cups zucchini cut into julienne strips
2 tablespoons sliced red onion
1/4 cup red bell pepper
1/8 teaspoon garlic salt
1/8 teaspoon white pepper
2 tablespoons chopped pecans toasted
Directions:
1. Heat olive oil in medium skillet.
2. Add zucchini then sauté until crisp tender.
3. Add remaining ingredients tossing to coat completely.
4. Heat 4 minutes.
5. Serve immediately.
