Prep: 5 minutes; Cook: 7 minutes. There's nothing better than garden-fresh zucchini, simply seasoned with butter and garlic. Ingredients:
1 tablespoon light butter |
3 garlic cloves, minced |
2 cups cubed zucchini (about 3/4 pound) |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
Directions:
1. Melt butter in a large nonstick skillet over medium-high heat. Add garlic, and sauté 1 minute. Add zucchini, and cook, stirring occasionally, 6 to 7 minutes or until crisp-tender. Stir in salt and pepper. |
