Zucchini Wheat Germ Cookies |

Since I have an abundance of zucchini in my garden I experiment around and try different recipes that use zucchini. I tried these lately and these are good. In case you are wondering sucanat is unrefined sugar. Ingredients:
1 cup sucanat |
3/4 cup butter, softened |
3/4 cup milk |
1 teaspoon vanilla |
1 egg |
2 cups whole wheat flour |
1 cup wheat germ |
1 1/2 teaspoons baking powder |
1 1/2 teaspoons cinnamon |
1/4 teaspoon salt |
1/4 teaspoon nutmeg |
1 cup shredded zucchini |
1/4 cup raisins |
1/4 cup chopped nuts |
Directions:
1. Preheat oven to 375 degrees. 2. Lightly grease cookie sheet. Mix sucanat, butter, milk, vanilla and egg in large bowl. Stir in flour, wheat germ, baking powder, cinnamon, salt and nutmeg. Fold in zucchini raisins, and nuts. 3. Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet. Bake 12 - 15 minutes or until light brown. |
