I tried a similar recipe but altered most of it to my own taste and came up with this one. It's really zesty and something different. Ingredients:
4 cups thinly sliced zucchini |
1/4 cup chopped red onion |
3 tomatoes, cut in wedges |
1/4 cup vegetable oil |
1/4 cup vinegar |
2 tablespoons sugar |
1 clove garlic, chopped fine |
1 teaspoon salt |
1/8 teaspoon pepper |
1 teaspoon basil |
Directions:
1. Mix all together and marinate for at least 2 hours if not more. 2. The longer it sits the better it tastes. 3. Yummy! |
