This is a very hearty casserole that can be served as a main dish, breakfast, brunch or just about anytime, it is good and bursting with flavors. Enjoy Ingredients:
1 tablespoon butter |
1/2 cup chopped white onion |
1 clove crushed garlic |
40 saltine crackers |
1 cup grated cheddar cheese |
1 cup shredded mozzarella cheese |
1 large zucchini ends trimmed and sliced lengthwise |
1/4 cup grated parmesan cheese |
3 small tomatoes sliced |
1-1/4 cup milk |
4 eggs |
1 teaspoon fresh basil |
1/2 teaspoon fresh oregano |
Directions:
1. In skillet melt butter then sauté onion and garlic. 2. Line bottom of shallow baking dish with 3 rows of six slightly overlapping crackers. 3. Sprinkle with 1/2 each of the cheddar, mozzarella and onion. 4. Top with half the zucchini and 1 tablespoon parmesan cheese then repeat layers. 5. Arrange tomatoes around edge then place 4 crackers in overlapping line down center. 6. Combine milk, eggs, basil and oregano then add remaining parmesan cheese. 7. Pour mixture over crackers then bake at 350 for 40 minutes. |
