This is a really nice topping for steak, and the leftovers make a delicious topping for toasted English muffins. Ingredients:
2 zucchini, sliced |
6 tomatoes, sliced |
2 onions, slices |
1 tablespoon olive oil |
Directions:
1. Heat oil in a pan. 2. Add the onion, cook for about 1 minute. 3. Add the zucchini, cook for 1 minute. 4. Add the tomatoes, reduce heat, and simmer for about 30 minutes, or until all the vegetables are tender, and the mixture has a chunky sauce type consistency. |
