ZUCCHINI TOMATO GRATIN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Corbett Estate in Fate, Texas in 1986. Ingredients:
2 tablespoons olive oil plus oil for baking dish |
1 small red onion |
3 medium zucchini or summer squash |
3 plum tomatoes |
3 cloves garlic minced |
1/2 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
1 tablespoon fresh thyme |
3 ounces gruyere cheese grated |
Directions:
1. Preheat oven to 350. 2. Lightly oil round baking dish. 3. Slice onion into rounds then slice zucchini and tomatoes 1/2 thick. 4. In large skillet over medium heat warm 2 tablespoons oil and sauté onion and garlic 5 minutes. 5. Place zucchini slices on edge around sides of baking dish. 6. Place tomato slices against zucchini then add some of the sautéed onion garlic mixture. 7. Repeat with zucchini, tomato and onion garlic mixture to form alternating rows. 8. Place remaining vegetables in center then sprinkle with salt, pepper, thyme and cheese. 9. Bake 25 minutes then serve warm. |
