Ingredients:
1 medium zucchini chopped-1/2 in pieces
2 small yellow crook neck squash chopped-same
1 medium sweet onion chopped-same
1 teaspoon(s) salt
1/4-1/2 teaspoon(s) pepper
1/2-1 teaspoon(s) garlic powder
4 ounce(s) cheddar cheese shredded
4 ounce(s) mozzarella cheese shredded
3 eggs beaten
2/3 package(s) saltines crushed
Directions:
1. Combine chopped squashes and onion with seasonings in a pot. Add enough water to cover and boil until squash is tender (about 10 minutes).
2. Drain and mash the cooked squash.
3. Add the remaining ingredients.
4. Pour mixture into buttered souffle baking dish and bake 30 minutes 350 degrees.
