This is like a hash. We love this in the summertime when the zuchs are abundant. Ingredients:
1 medium sized zucchini |
3/4 cup diced celery |
1/2 lb ground beef |
1/4 cup diced onion |
2 fresh tomatoes |
1/4 cup margarine |
salt and pepper, to taste |
Directions:
1. Peel and dice zucchini and put in skillet with margarine. 2. Add celery and onion. 3. Cook over medium heat. 4. Fry ground beef in separate skillet until no longer pink. 5. Drain off drippings. 6. Add meat to other ingredients. 7. Add tomatoes and seasonings to taste. 8. Simmer to 45 minutes. |
