Tasty, quick and easy side dish. Ingredients:
2 tablespoons butter |
1/2 onion, thinly sliced |
2 -3 zucchini, unpared,cut in 1/2 inch diagonal slices |
1/2 teaspoon salt |
1 dash pepper |
1/2 teaspoon garlic salt |
1/2 teaspoon dried oregano |
1/2 teaspoon dried basil |
3 medium tomatoes, cut in eighths |
crouton (optional) |
grated parmesan cheese |
Directions:
1. In hot butter in skillet, sauté onion until tender. 2. Add zucchini thru basil; mix well. 3. Add 1/4 c water and bring to a boil. 4. Reduce heat to medium low, cover and simmer, stirring occasionally, 10-15 minutes (add more water if necessary). 5. Add tomatoes and cook without cover 5 minutes more. 6. Stir in croutons (if desired). 7. Shake parmesan on servings or serve w/ parmesan& let diners shake it on. |
