This was a quick side that I whipped up last night. I thought it was pretty good. Ingredients:
large zucchini |
half small onion |
large clove of garlic (or two smaller ones) |
3 button mushrooms |
olive oil |
salt & pepper |
white wine |
Directions:
1. Coarsely chop onion and mushrooms 2. Slice garlic thin and lightly chop 3. Slice zucchini diagonally to get ovals 4. Heat pan over medium heat and add oil 5. Add onion, mushroom, & garlic. Cook for about 1 min 6. Add zucchini and cook until zucchini is cooked through but not soggy 7. Add salt & pepper and toss 8. Add white wine (approximately 2 Tbsp.) and let cook until wine is evaporated or absorbed. 9. Serve immediately |
