Courgettes (zucchini to you American types!) get the makeover with tomato and red onion to produce a great Italian style side dish, tasty hot in Winter or cold as a Summer sidesalad. If you serve cold, add a dash of honey at the end. Ingredients:
1 red onion, chopped |
2 zucchini, sliced |
1 440g tin diced tomato |
3 cloves fresh garlic |
1 red chilli, seeded and chopped (optional) |
1 glass marsala wine (or any good sweet wine, sherry included) |
6-10 basil leaves, chopped |
olive oil (evoo) |
salt and pepper |
Directions:
1. Add dash olive oil to a medium saucepan over medium heat on stove 2. Add red onion and sautee till softening 3. Add garlic, crank up the heat, stirring for a minute or so 4. Add wine, and then tinned tomato after wine comes to boil, turn down heat to simmer 5. Add zucchini and chopped basil, cover and simmer for a couple of minutes* 6. Remove lid and reduce liquid over high heat for a few minutes 7. Add seasoning to taste 8. Serve with whatever you like. It works well with sauteed lamb fillet (slice and fry in a little olive oil with garlic, sage and oregano) 9. * - ignore the simmer in this step if you like firmer veggies! |
