ZUCCHINI SEAFOOD CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Thieme Estate in Crandall, Texas in 1984.
Ingredients:
4 cups zucchini peeled and sliced 1/4
1-1/2 cups baking mix
1-1/2 cups shredded processed sharp american cheese
1 cup chopped white onion
6-1/2 ounce can crab meat drained and cartilage removed
1/2 cup vegetable oil
3 eggs beaten
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon pepper
Directions:
1. Heat oven to 400 then grease a baking dish.
2. Mix all ingredients together then spread evenly into casserole.
3. Bake uncovered for 30 minutes then garnish with thinly sliced zucchini.
