A co-worker brought this in and it is delicious. It taste like apple sauce only better. Her sister made it. She uses the extra large zucchini.She said Splenda works well instead of sugar and it also freezes great. I am guessing on the servings and the time. She also peeled her zucchini Ingredients:
8 cups cubed zucchini |
1 (8 ounce) can frozen lemonade concentrate |
1/4-1/2 cup water |
3/4 cup white sugar |
1 teaspoon cinnamon |
1/4 teaspoon nutmeg |
Directions:
1. cook until tender. 2. mash with a potato masher. 3. stir until sugar dissolves. |
