This zippy Mexican burger is made healthier with added zucchini. Your family is going to love this unique burger with it’s crowd-pleasing salsa sauce. Ingredients:
1 lb ground beef |
1/2 cup breadcrumbs |
1 egg, slightly beaten |
1/3 cup zucchini, peeled, shredded and squeezed dry |
1/4 cup salsa |
1/3 cup purple onion, chopped |
1 teaspoon chili powder |
1/2 teaspoon cumin |
salt and pepper |
1/2 cup mayonnaise |
1/4 cup salsa |
1/2 teaspoon chili powder |
1/2 teaspoon cumin |
1 teaspoon prepared yellow mustard |
4 hamburger buns |
lettuce, tomato, sliced purple onion, and sliced american cheese |
Directions:
1. Combine ground beef, bread crumbs, egg, zucchini, salsa, onion, chili powder, and cumin. Shape into 4 patties and refrigerate for at least 30 minutes. 2. Make sauce by combining mayo, salsa, mustard, chili powder, and cumin in a small bowl. 3. Cook burgers on a gas grill (oiled) or George Foreman Grill until done to your liking, about 4-5 minutes per side. 4. Toast buns, if desired. 5. Spread bottom bun with sauce, top with burger, cheese, and toppings of your choice. Spread more sauce on top bun and put on burger. Serve with dill pickles and french fries or potato chips. |
