From my collection of handwritten recipes 1970-1984. Ingredients:
1/2 cup oil |
2 tablespoons wine vinegar |
1 small garlic clove, minced |
1/2 teaspoon salt |
1/8 teaspoon fresh ground pepper |
3 medium zucchini, sliced very thin |
1/4 cup thinly sliced green onions with top |
lettuce cup |
Directions:
1. Mix oil, vinegar, garlic, salt and pepper in a small bowl. Pour over zucchini and onions and toss. Cover and chill 1 hour or longer. Serve in lettuce cups, spooning on any remaining dressing. |
