Ingredients:
1/3 cup bisquick baking mix |
2 eggs, beaten |
1/4 cup parmesan cheese |
2 cups shredded zucchini |
salt and pepper |
Directions:
1. Combine Bisquick, cheese, salt and pepper. 2. Add eggs. 3. Fold in zucchini. 4. Drop into a skillet with a few T. oil 5. Fry a couple minutes on each side. |
