From Prevention's Flat Belly Foods We ended up sprinkling salt to get more flavor. When we do this recipe again I'll double the amount of zucchini and use much less Italian seasoning. My husband also thinks baking would be better, although microwaving it for 3 mins. made this a super fast and easy to prepare dish. Ingredients:
1/4 cup rotini |
3/4 cup cottage cheese |
1 tbsp italian seasoning |
1/2 cup zucchini, shredded |
1 cup tomatoes, diced |
1/4 cup mozzarella cheese, shredded |
2/3 cup black olives, sliced |
Directions:
1. Cook pasta. Set aside. 2. Combine cottage cheese and Italian seasoning. Stir in rotini and zucchini. Top with tomatoes and sprinkle with mozarella. Microwave on high for 3 mins. Sprinkle olives on top and serve. |
