Veggie and starch all in one easy side. Very good use of zucchini and quite nice with a grilled burger or chicken main course. Ingredients:
1 large onion, finely chopped |
1 cup of sliced fresh mushrooms |
1 medium zucchini, scrubbed chopped about one cup |
1/2 tsp of dried basil |
1/2 tsp of dried oregano |
2 tbsp of butter |
1 1/2 cups of cooked cooled rice |
5 eggs |
1/3 cup of milk |
1/3 cup of grated parmesan cheese |
Directions:
1. In a skillet cook onion, mushrooms, zucchini, basil and oregano in butter until the veggies are tender but not brown. 2. Stir in rice eggs, milk and 2 tbsp of cheese. 3. Turn into a well-greased 9 inch pie pan. 4. Sprinkle with remaining cheese. 5. Bake uncovered in 350 degree oven for 25 minutes. 6. Let stand for 10 minutes. 7. Great with a fresh tomato salsa topping, too. |
