This is a recipe a friend sent me. It is great when you have alot of zucchini you want to use and taste great. Ingredients:
zucchini relish (8 pints) |
10 c. zucchini (minced) |
1 c. salt |
5 cups onions |
1cup celery |
3 green peppers (diced) |
2 red peppers *sweet* (diced) |
2 tsp. tumeric |
1t dry mustard |
3t celery seed |
6 c. sugar |
5 cups white vinegar |
3t cornstarch |
Directions:
1. * Prepare Squash: combine with salt & other vegetables. Allow to stand overnight. Drain, rinse and drain. Press bowl down on top of vegetable mixture to force out liquid. In a large pot, combine remaining ingredients; add vegetables and bring to a rolling boil. Reduce heat and boil gently for about 20 minutes. Pour into hot jars. 2. * Just remove the seeds from the zucchini, do not peel. Then grind the zucchini. |
