a good relish that can be used for anything - great on burgers! Ingredients:
6 cups cubed zucchini (or shred in a food processor) |
2 green peppers, chopped |
2 red bell peppers, chopped |
6 medium onions, diced |
5 cups sugar |
3 cups cider vinegar |
1 teaspoon salt |
1 1/2 teaspoons celery seeds |
2 teaspoons mustard seeds |
Directions:
1. Place zucchini, chopped peppers, and onions in a large container. Cover with crushed ice and let set for 3 hours. 2. In a large pot, place remaining ingredients and bring to a boil. Drain the vegetables well and add to the pot. Bring to a boil again. 3. Ladle vegetables into wide mouth jars that have been cleaned and are hot. Seal and process in hot water bath. |
