Can add 1/2 cup chocolate chips for the original recipe but I like them with just the raisins Ingredients:
1/2 cup butter |
1 cup brown sugar |
1 teaspoon vanilla |
1 egg, beaten |
1 1/2 cups all-purpose flour |
1/4 teaspoon baking powder |
1/4 teaspoon baking soda |
1 cup zucchini, shredded and moisture removed |
1 cup quick cooking oats |
1/2 cup coconut |
1/2 cup raisins |
Directions:
1. Preheat oven to 350*. (Or if using Kira?s crappy New Windsor oven ? Preheat to 355*) 2. Cream butter and sugar together. Add vanilla and egg. Beat well. 3. Add flour, baking soda, baking powder, and zucchini. Mix. 4. Add oats, coconut, nuts, raisins and chocolate chips. Mix well. 5. Drop by small spoonfuls (20-25 per sheet) on a greased cookie sheet. 6. Bake at 350 degrees for 12-15 minutes. 7. Makes about 4 dozen |
