Zucchini Quotmock Crab Cakesquot

When life hands you an exuberance of zucchini, make them into crispy cakes.
Ingredients:
1 egg, lightly beaten
1 1/2 tsp. old bay seasoning
1 tbsp. onion flakes
2 tbsp. melted butter
2 1/2 cups grated peeled zucchini, drained or patted dry
1 cup plain breadcrumbs
1/2 cup flour, seasoned with 1/2 tsp of cayenne and 1/4 tsp of salt
oil for frying
Directions:
1. Combine egg, seasoning, onion flakes, butter and zucchini.
2. Stir in breadcrumbs.
3. Shape into cakes and roll in seasoned flour.
4. Fry in a small amount of oil until golden brown on both sides.
5. Used my cast iron pan, worked well about 1/4 inch film of oil.
6. Serve with cocktail sauce or tartar sauce if you like.
