Stolen from a blogger. Ingredients:
1/2 cup chunky salsa |
1 cup drained black beans |
1 zucchini, shredded |
1/4 teaspoon cumin |
1/4 teaspoon chili powder |
8 flour tortillas |
shredded cheese (cheddar, monterrey jack, mexican blend) |
Directions:
1. Shred zucchini on a box grater. 2. Combine salsa, beans and zucchini. 3. Heat pan over medium heat. Spread mixture over tortilla, top with cheese and cover with another tortilla. 4. brown on both sides (about 4-5 minutes per side). 5. You can keep them warm in a 170 degree oven while you cook the rest. 6. Serve with slsa on the side. |
