                    Another great use for all that abundant, summer zucchini! Ingredients: 
                    
                        
                                                2 cups shredded zucchini  |  
                                                2 eggs  |  
                                                1/4 cup finely chopped onion  |  
                                                1 clove garlic, minced  |  
                                                1 1/2 cups buttermilk baking mix  |  
                                                salt and ground black pepper to taste  |  
                                                oil for frying  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. In a large bowl, combine zucchini, eggs, onion, and garlic. Blend in baking mix, salt and pepper. 2. Heat 1/2 inch of oil in deep-fryer to 375F. 3. Drop batter by spoonfuls into hot oil, and fry until evenly brown and fluffy. 4. Drain on paper towels. 5.
