Another great use for all that abundant, summer zucchini!
Ingredients:
2 cups shredded zucchini
2 eggs
1/4 cup finely chopped onion
1 clove garlic, minced
1 1/2 cups buttermilk baking mix
salt and ground black pepper to taste
oil for frying
Directions:
1. In a large bowl, combine zucchini, eggs, onion, and garlic. Blend in baking mix, salt and pepper.
2. Heat 1/2 inch of oil in deep-fryer to 375F.
3. Drop batter by spoonfuls into hot oil, and fry until evenly brown and fluffy.
4. Drain on paper towels.
5. Sprinkle with salt before serving.
