This is such a good looking side dish and very tasty too, I added 2 carrots diced so i basically doubled the recipe and it will feed 4 no problem and I also cooked it in the oven. Ingredients:
1 medium onion |
1 tablespoon olive oil |
1 large zucchini, cubed |
2 plum tomatoes, peeled, quartered and chopped |
2 tablespoons green pepper |
2 garlic cloves, minced |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1 tablespoon grated parmesan cheese |
2 teaspoons fresh parsley |
Directions:
1. 1. In a small skillet, saute the onion in oil until tender. 2. 2. Add the zucchine, tomatoes, green pepper, garlic, salt and pepper. 3. 3. Reduce heat and simmer uncovered for 8-10 minutes or until vegetables are tender. 4. 4. Sprinkle with parmesan cheese and parsley. 5. I baked mine in the oven on 350 F for about 30-45 minutes |
