A fabulous way to serve zucchini. It goes well with just about everything. We love it and hope you do too.
Ingredients:
2 tablespoons butter
3 cloves garlic chopped
1-1/2 cups diced white onion
2-1/2 pounds zucchini cut into 1/4 inch slices
2 teaspoons dried basil leaves
1 large tomato seeded and diced
1 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. Heat butter in large nonstick skillet over medium heat.
2. Add garlic and onion then sauté until softened about 5 minutes.
3. Stir in zucchini and basil then cook covered 12 minutes stirring often.
4. Add tomato, salt and pepper.
5. Cook stirring constantly for 3 minutes.
