A gluten-free crust for dieters craving pizza. Caveat emptor: it is not too much like the real deal... The recipe was from . Ingredients:
2 medium zucchini, shredded |
salt |
2 eggs |
1 cup reduced-fat mozzarella cheese, shredded |
2 garlic cloves, minced |
1/4 teaspoon fresh ground black pepper |
2 tomatoes, sliced |
1 green onion, chopped |
30 g goat cheese, crumbled |
2 tablespoons fresh basil, torn |
Directions:
1. For the zucchini crust: shred two medium zucchini. Salt and drain at least 15 minutes. Rinse and pat dry. Mix with two eggs, 1 cup shredded reduced fat mozzarella, 2 cloves minced garlic, and fresh ground black pepper. Spread on a greased baking sheet (I used a pizza stone) and bake at 375F for 12 to 15 minutes, until light brown. 2. I topped with sliced tomatoes, green onions, and crumbled herbed goat cheese before broiling for a few minutes. Then I added a few fresh basil leaves. |
