I picked up this recipe from my brother-in-law. It is an ideal way to utlize some of the zucchini that seems to multiply out of control in the summertime. And, it is a great way to get the kids to eat some of that zucchini. Ingredients:
2 -3 small zucchini, cut into small pieces |
1 stalk celery, diced fine |
1 small onion, diced fine |
1 tablespoon cooking oil |
1 -2 tablespoon bread or 1 -2 tablespoon cracker crumb |
0.5 (14 ounce) jar pizza sauce |
1 cup mozzarella cheese |
Directions:
1. Saute zucchini, celery and onion in small amount of cooking oil until soft. Add enough cracker/bread crumbs to bind the vegtables together. Add the pizza sauce and heat thoroughly. Top with mozarella cheese prior to serving. |
