This pizza has zucchini crust and vegies and cheese on top. Good stuff. The crust has a very mild taste. Ingredients:
3 cups shredded zucchini |
2 eggs |
1/3 cup whole wheat flour |
1/2 tsp salt |
1 cup shredded low fat mozzarella |
2 roma tomatoes |
1/2 cup chopped onion |
1/2 cup chopped green bell pepper |
1 tsp oregano |
1 tsp basil |
3 tbs parmesan cheese |
Directions:
1. Stir zucchini and eggs well. Add the flour and the salt stir again. Spread the dough on a 12inch pizza pan ( be sure to spray it so it doesn't stick. ) 2. Bake at 450 for 8 minutes. 3. Reduce heat to 350. Sprinkle all remaining ingredients on top of crust. Bake for 15-20 minutes. 4. Makes 6 slices. |
