veggie- friendly pizza with a zucchini crust Ingredients:
2 cups fresh zucchini |
2 tablespoons olive oil |
1/4 cup flour |
2 eggs |
1/2 cup mozzarella cheese |
1/2 cup parmesan cheese |
1 teaspoon basil |
1 teaspoon rosemary |
1 tomato |
1 garlic clove |
1/2 cup sliced mushrooms |
1 green bell pepper |
1/4 cup black olives |
Directions:
1. preheat oven to 400 degrees F. oil and flour a 10 inch pie pan. 2. grate zucchini and combine with flour, mozzarella, parmesan, basil, rosemary and 1 tbsp olive oil. 3. spread in prepared pan and bake 35- 40 minutes, until golden brown. brush with remaining oil halfway through baking. 4. remove from oven and let cool 10 minutes. loosen crust from pan with spatula, so it wont break later. 5. top with tomato, extra cheese, pepper, olives, mushrooms as desired. 6. bake at 400 until heated through. |
