I first tried this to o use up those abundant zucchini, and it really does taste like pineapple! I use it for anything calling for crushed pineapple in fresh or baked goods, and I've even gotten the kids to eat it over cottage cheese. Ingredients:
18 cups peeled, seeded, chopped zucchini |
1/2 c. lemon juice |
3 c. sugar |
46 oz. can pineapple juice |
Directions:
1. Bring juices and sugar to a boil. 2. Add zucchini and simmer 20 minutes. 3. Pack and seal in hot jars with hot lids. 4. Process pints 15 minutes in a boiling water bath. |
